beef and anchovies? get out...



heres another blog i have been saving/not having the time to post. 2 sundays ago i was ment to be cooking a spiced leg of lamb for the family but before i wasn't feeling 100% i opted for raiding the cupboards and made a beef stew instead. i was a bit worried about this recipe at first as it involves anchovies and mum is not a fan. however it turned out to be really really tasty and mum loved it!





you will need :


tablespoons olive oil
1.5 kilograms stewing steak
large onion
cloves garlic
medium carrots
sticks celery
teaspoons dried thyme (or 1 ½ tablespoons fresh)
anchovies
tablespoons marsala
500 ml red wine or vermouth
300 ml beef stock
tablespoon tomato puree
½ teaspoon mace






start by throwing the chopped onion, carrot, garlic and celery into a suitable hob casserole dish along with the oil. Allow this to soften gently.





whilst thats happening chop up the anchovies, i know what you are thinking but trust me, its just like adding salt! you dont even know its there.


next add the beef and stir well with the veg, allow that to cook until it no longer looks like you have thrown in a whole cow.


add the thyme, chopped anchovies, marsala (i didn't have any so i opted for sherry instead), red wine, stock, tomato puree and mace and stir well.


the thing to remember with the red wine is that there isn't a set red wine to add to the stew. base it on your personal preference as it does give flavour, a good rule of thumb is "would you drink it?"

allow that to come to the boil and then season to taste, then throw into the oven for 3 hours.

i have to say it was a lovely meal, although next time i think i would try it in the slow cooker to let the meat melt in the mouth.
